We were delighted to give a presentation for the Sustainability Research Open Seminar 3: Food and Agriculture in the World, hosted by the West Tokyo Joint Center for Sustainability Research and Implementation on March 15, 2025. The seminar took place at the Tokyo University of Agriculture and Technology’s Koganei Campus, in the 150 Year Commemorative Building (Ellipse). With simultaneous interpretation from Japanese to English, the event brought together researchers, industry experts, and policymakers for an engaging discussion on the future of sustainable food systems.

Our talk, “The Future of Food Innovation: How Singapore and Japan Are Leading the Way,” explored groundbreaking advancements in alternative proteins and the critical role these two nations play in creating a sustainable food supply and shaping the global food landscape.

Prof. Akinori Yamanaka (Director of the Center), Prof. Maki Sakamoto (The University of Electro-Communications), Prof. Izumi Hoshi (Tokyo University of Foreign Studies), Dr. Keri Matwick (Nanyang Technological University, Singapore), Dr. Kelsi Matwick (University of Florida, USA).

Thank you to Prof. Yuki Yasumura who helped organize the event and was Kelsi’s host at Tokyo University of Agriculture and Technology during the fall term, September 2024 to March 2025, where she was a Visiting Professor and Fulbright Lecturer.

Keri and Kelsi, enjoying Japan’s rich culture and history!
A treat to be there for the start of cherry blossom season!
